KENTUCKY CHICKEN NOODLE

Ingredients:

  • 3 boneless chicken thighs

  • 1 small red onion (diced)

  • 1 red bell pepper (diced)

  • 3 shishito peppers (diced)

  • 1/2 bag of Green and red cabbage with carrots mixture

  • 1 package of Soba Noodles

  • 2 Tablespoons of Kosher Salt (use less if you prefer)

  • 1 Tablespoon of Black Pepper

  • 1 Tablespoon of Oregano

  • 1 Tablespoon of Cumin

  • 1 Tablespoon of Red Pepper Flake

  • 1 Tablespoon of Ground Ginger

  • 1 quart of Vegetable Stock

  • 3 bay leaves

  • 1 Bottle of Kentucky Henry Bain Sauce

  • 6 dashes of Soy Sauce

  • 1 bunch of cilantro (chopped)

  • 3 green onions (chopped)

  • 1 lime

  • 3 tablespoons of olive oil


Prep: Mix spices together and season chicken thighs. Heat a pot to high and add olive oil. Add chicken thighs and sear on each side for 5 minutes.

Cook: Add red onions, red peppers, shishito peppers. Saute for 5 minutes. Add vegetable stock, bay leaves and bring to boil for 10 minutes. Remove chicken from boiling pot and shred. Add chicken back to pot and add cabbage/carrot mixture, soba noodles, soy sauce and Kentucky Henry Bain sauce. Set the temp to low and cover with a lid. Cook on low for another 10 minutes.

Eat: Remove bay leaves and ladle soup into a bowl. Garnish with green onions, cilantro and lime. Enjoy!
