KENTUCKY HOT BROWN
Ingredients:
1 bone-in turkey breast
2 tablespoons of Y’all Sauce Co Southern Rub
1 loaf of Texas toast
1 lb of thick cut applewood bacon
1 roma tomato
1/2 cup of shredded cheddar cheese
1/2 cup of Pecorino Romano
1 bottle of KY Henry Bain Sauce
Fresh Parsley
Mornay Sauce (link for recipe)
Prep: Pre-heat oven to 500˚ convection. Sprinkle Y’all Sauce Co Southern Rub (1/4 cup Kosher Salt, 1/8 cup Black Pepper, 1/8 cup Dried Oregano, 1/8 cup Granulated Garlic, 1/8 cup Cumin, 1/8 cup Red Pepper Flake over turkey breast and place in a roasting pan. Place turkey breast in the oven for 30 minutes. After 30 minutes, reduce temperature down to 350˚ and cook for another hour and a half. Pull turkey out of the oven and baste with Kentucky Henry Bain Sauce. Place back in the oven for another 15 minutes. Remove and set aside.
Mix: Place applewood smoked bacon on baking sheet and cook on each side for about 15-20 minutes until crispy. Place Texas toast on a baking sheet and allow to toast in the oven for about 3-5 minutes. Remove toast from oven. Slice turkey and place two slices of turkey on the Texas toast. Top with bacon, mornay sauce, cheddar and Pecrino Romano cheese. Add 4 slices of tomatoes and place on baking sheet. Place back in the oven for another 10 minutes or until cheese is melted and brown.
Eat: Remove form oven and slide onto a plate. Top with parsley and your off the races!
