OYSTER Po’ BOY

 
 

Ingredients:

  • 12 freshly shucked oysters

  • 1 cup of cornmeal mix

  • 1 tomato (sliced)

  • 1 head of iceberg lettuce (shredded)

  • 2 Bolillo rolls

  • 1 small container of Canola oil

  • 1 bottle of Y'all Company Comeback Sauce

  • Pinch of Kosher salt


Prep: Heat oil in a cast iron skillet to 350 degrees. Dredge the oysters into the cornmeal mix.s.

Cook: Add oysters to hot oil and fry for 1 to 2 minutes until golden brown. Remove from oil and set aside on a paper towel. Sprinkle with Kosher salt. Slice open Bolillo roll and slather on comeback sauce. Add tomato and shredded lettuce. Stack on fried oysters and add more comeback sauce.
