Comeback Fish Tacos
Ingredients:
2 Tilapia Filets or Your Favorite White Fish (Get Catfish and make it real southern)
1 pack of flour or corn tortillas (hell get some masa and lard and make your own)
1 red bell pepper
1 green bell pepper
1 onion
3 tablespoons of salt
2 tablespoons of black pepper
2 tablespoons of old bay
1 teaspoon of cayenne pepper
1 teaspoon of red pepper flake
1 tablespoon dried oregano
Olive Oil
1 bottle of MS Comeback Sauce
2 limes
Splash of red wine vinegar
Fresh Cilantro
Prep: Take all your seasonings and mix together in a bowl. Julienne peppers and onions and mix together in a *separate* bowl. Coat with oil olive and sprinkle seasoning mix over vegetables (about half of the bowl of your seasoning mix). Take your fish fillets and coat with olive oil and drain on both sides of the fish (if fish is frozen, make sure it is thawed before oil and seasoning). Chop cilantro and set aside.
Cook: Heat two skillets on your stove top one on high heat, the other medium to high heat. The skillet on high heat, add your pepper onion mix to the skillet. Stir vegetables for about a minute for even cooking then keep an eye on them not to burn (if too much smoke occurs turn down to medium heat). Add the seasoned fish top side down in the other skillet and cook for about 3 minutes or until a nice seared brown color occurs.
(If the filet breaks or sticks, that’s ok, we have a solution). Flip fish over and cook for about 3 minutes on that side. At this point, turn off the skillet with the vegetables, and a splash of red wine vinegar, squeeze 1 lime over the and place the mixture in a bowl. Put skillet back on *the stove top*and warm your tortillas up for about 1 minute in each side. Will your tortillas are warming, take your spatula you turned the fish over with and start breaking the fish into small pieces while still in the pan (see I told you you were ok). Once fish has been chopped very fine, squeeze the other lime over the fish.
Eat: Take your warm tortilla and add to the plate, add your fish then add the sautéed peppers and onions, drizzle with Mississippi Comeback sauce and finish with chopped cilantro. Eat and enjoy, Y’all!
