SAUSAGE POTATO SOUP

Bowl of Sausage Potato Soup
 
 

Ingredients:

  • 1 package of ground country sausage

  • 1 yellow onion (diced)

  • 2 celery stalks with leaves (diced)

  • 1 carrot (diced)

  • 3 cloves of garlic (minced)

  • 5 yukon gold potatoes (cleaned and cubed with skin on)

  • 1 quart of vegetable stock

  • 1 tablespoon cumin

  • 1 tablespoon dried oregano

  • 1 tablespoon chili powder

  • 1 tablespoon paprika

  • 1 tablespoon crushed red pepper flake

  • 1 tablespoon black pepper

  • 2 tablespoons of Kosher salt

  • 2 cups of milk

  • 3 tablespoons olive oil


Prep: Mix all seasonings together and set aside. Mix onions, celery, garilc and carrots together and set aside. Preheat a pot on the stove to high heat and cook sausage until brown. Remove sausage from the pot to a plate lined with a paper towel. Set the sausage aside. Lower heat to medium high and keep the sausage drippings in the pot. Add olive oil and spices and let the spices cook for about 2 minutes.

Cook: Add vegetable mix to the pot with seasoning and cook until vegetables are soft, about 8 to 10 minutes. Add potatoes and cook for about another 5 minutes. Add vegetable stock, turn heat to high and cover. Bring to a boil and cook for another 10 minutes or until potatoes are tender. Remove from heat and take about half of the soup and place in a blender. Blend soup until smooth and add the blended soup back into the pot. Add milk and more salt and pepper for taste.

Eat: Serve hot with a garnish of sour cream, cheddar cheese, salsa and cilantro. Great with a grilled cheese or cheese quesadilla! Enjoy!
